Cornalin

Cornalin is Valais' oldest red vine variety. Cornalin is originally from Valais and has probably been planted there since the 11th Century. Being difficult to grow, it calls for the best soil. Its delicacy and its power make it one of the world's best red wines.

Vine variety: Cornalin.
Colour: Dark red with hints of black.
Fragrance: Black cherry and spices.
Taste: Powerful, generous, distinguished tannins and silky. A balanced after taste with a tight edge. With age, it develops an anthological delicateness.
Alcohol: 13 % vol.
Ideal serving temperature: 16-18°C
Preservation: 10 to 15 years.
Fermentation: A long time in vats and then in barrels.
Name: AOC Valais.
Culinary accompaniments: Partridge, guinea fowl, quails, pheasant, roe deer, beef ribs and cheese
